INGREDIENTS
- 1 large Cauliflower
- 2 eggs
- 1 cup mozzarella cheese
- 3 cloves garlic (minced)
- 1 small onion (chopped)
- 1 carrot (grated)
- 1 bell pepper (chopped)
- 2 tablespoons parsley
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon oregano
- 3 tablespoons flour
- 2 tablespoons olive oil
- 1/2 cup tomato sauce
- Extra cheese for topping
INSTRUCTIONS
- Wash and cut the cauliflower into florets.
- Boil for 5–7 minutes until slightly soft, then drain well.
- Mash the cauliflower with a fork or potato masher.
- Add eggs, flour, garlic, onion, carrot, bell pepper, parsley, mozzarella cheese, salt, paprika, oregano, and black pepper. Mix well.
- Grease a baking dish with olive oil.
- Spread the cauliflower mixture evenly into the dish.
- Add tomato sauce on top and sprinkle with extra cheese.
- Bake at 200°C (390°F) for 30–35 minutes until golden and crispy on top.
- Let it cool slightly before slicing and serving.
TIPS
- Drain the cauliflower completely to avoid a watery texture.
- Add chili flakes for a spicy flavor.
- You can use cheddar or parmesan cheese for extra taste.
- Serve with yogurt dip or garlic sauce.
