Ingredients

For the base:

  • 45g biscuits (digestive or graham crackers)
  • 20g butter

For the cheesecake filling:

  • 180g cream cheese
  • 150g whipping cream
  • 40g sugar
  • 10g milk
  • 10g gelatine

For the raspberry layer:

  • 200g raspberries
  • 20g sugar
  • 10g lemon juice
  • 5g gelatine

Step-by-Step Instructions

1. Prepare the Base

Melt the Butter: Melt the butter in a small saucepan or microwave.

Crush the Biscuits: Start by crushing the biscuits into fine crumbs. You can do this by placing them in a ziplock bag and using a rolling pin or by pulsing them in a food processor.

Combine and Press: Mix the melted butter with the biscuit crumbs until well combined. Press this mixture firmly into the bottom of a springform pan to form the base. Use the back of a spoon or the bottom of a glass to press it down evenly. Place the pan in the refrigerator to set while you prepare the filling.

2. Make the Cheesecake Filling

Beat the Cream Cheese: In a large mixing bowl, beat the cream cheese and 40g of sugar until smooth and whipping creamy. Make sure there are no lumps.

Soften the Gelatine: Dissolve the 10g of gelatine in the 10g of milk. Let it sit for a few minutes until it becomes spongy, then gently heat it until fully dissolved. Allow it to cool slightly.

Whip the Cream: In a separate bowl, whip the cream until it forms stiff peaks.

3. Prepare the Raspberry Layer

Cook the Raspberry Mixture: In a small saucepan, combine the raspberry puree, 20g of sugar, and lemon juice. Cook over medium heat until the sugar dissolves.

Blend the Raspberries: In a blender or food processor, puree the raspberries until smooth. Strain the puree through a fine sieve to remove the seeds.

Pour the Raspberry Layer: Once the cheesecake layer has set, carefully pour the raspberry mixture over the top. Smooth it out with a spatula and place it back in the refrigerator for at least another 2 hours, or until fully set.

3. Prepation of gelatine

Soften the Gelatine: Dissolve the 10g of gelatine in a small amount of cold water. Let it sit until spongy, then gently heat until fully dissolved.

Or you can Add 10g of milk and add 10g of gelatine and heat in the microwave over untile it dissolves quite well, pour this to the cheese batter mixture and stir well. Allow to cool slightly.

Divide half: Now divide half of this gelatine cheese batter mixture and Add the raspberry sauce in it , stir well.

Combine: Gradually fold the whipped cream into the cream cheese mixture until fully incorporated. Then, slowly mix in the cooled gelatine mixture until smooth.

Pour the Filling: Pour the raspberyy cream cheese filling over the chilled biscuit base. Smooth the top with a spatula. Place the pan back in the refrigerator to set for at least 1 hour.

Serving and Presentation
