INGREDIENTS
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 2 tbsp sour cream (the secret ingredient for soft diner-style pancakes!)
- Butter or oil for cooking
- Maple syrup & honey for serving
INSTRUCTIONS
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, eggs, melted butter, vanilla, and sour cream until smooth.
- Pour wet ingredients into dry ingredients and stir gently. Do not overmix; small lumps are okay.
- Heat a non-stick pan or griddle over medium heat and lightly grease it.
- Pour 1/4 cup batter onto the pan for each pancake.
- Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Serve warm with butter, honey, or maple syrup.
TIPS
- Let the batter rest for 5 minutes before cooking for extra fluffy pancakes.
- Use medium heat to avoid burning the outside too quickly.
- Add chocolate chips or blueberries for extra flavor.
