INGREDIENTS
- 1 cup chopped pecans
- 1 cup brown sugar (packed)
- 2 large eggs
- 1/2 cup melted butter
- 1/2 cup all-purpose flour
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/2 tsp baking powder (for slightly lighter texture)
INSTRUCTIONS
- Preheat oven to 175°C (350°F). Grease a muffin pan or line with paper cups.
- In a bowl, whisk together brown sugar, eggs, melted butter, and vanilla until smooth.
- Add flour, salt, and baking powder (if using). Mix until just combined.
- Fold in chopped pecans evenly.
- Spoon mixture into muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes or until tops are golden and set.
- Allow to cool slightly before removing from pan. The centers will stay soft and gooey.
