Pecan Pie Muffins are rich, sweet, and nutty mini desserts inspired by classic pecan pie. They feature a soft, caramel-like center with a lightly crisp, golden top packed with toasted pecans. INGREDIENTS

  • 1 cup chopped pecans
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: 1/2 tsp baking powder (for slightly lighter texture)

INSTRUCTIONS

  1. Preheat oven to 175°C (350°F). Grease a muffin pan or line with paper cups.
  2. In a bowl, whisk together brown sugar, eggs, melted butter, and vanilla until smooth.
  3. Add flour, salt, and baking powder (if using). Mix until just combined.
  4. Fold in chopped pecans evenly.
  5. Spoon mixture into muffin cups, filling each about 3/4 full.
  6. Bake for 18–22 minutes or until tops are golden and set.
  7. Allow to cool slightly before removing from pan. The centers will stay soft and gooey.
