Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 ½ cups sugar
- 2 eggs
- 1 can (20 oz) crushed pineapple (with juice)
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
For the Frosting:
- ½ cup butter
- 1 cup sugar
- ½ cup evaporated milk
- 1 tsp vanilla extract
- 1 cup shredded coconut
- ½ cup chopped nuts (optional)
Instructions
- Preheat oven to 180°C (350°F) and grease a baking pan.
- In a bowl, mix flour, sugar, baking soda, and salt.
- Add eggs, vanilla extract, and crushed pineapple with juice. Mix well until smooth.
- Pour batter into the prepared pan.
- Bake for 30–35 minutes or until a toothpick inserted comes out clean.
- While the cake bakes, prepare frosting:
- In a saucepan, combine butter, sugar, and evaporated milk.
- Cook on medium heat, stirring constantly until it thickens slightly.
- Remove from heat and add vanilla, coconut, and nuts.
- Pour warm frosting over the hot cake.
- Let it cool before serving.
