Ingredients

For the Cake:

  • 1 tsp vanilla extract

For the Frosting:

  • ½ cup butter
  • 1 cup sugar
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1 cup shredded coconut
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking pan.
  2. In a bowl, mix flour, sugar, baking soda, and salt.
  3. Add eggs, vanilla extract, and crushed pineapple with juice. Mix well until smooth.
  4. Pour batter into the prepared pan.
  5. Bake for 30–35 minutes or until a toothpick inserted comes out clean.
  6. While the cake bakes, prepare frosting:
    • In a saucepan, combine butter, sugar, and evaporated milk.
    • Cook on medium heat, stirring constantly until it thickens slightly.
    • Remove from heat and add vanilla, coconut, and nuts.
  7. Pour warm frosting over the hot cake.
  8. Let it cool before serving.
