INGREDIENTS:
- 1 medium cauliflower (cut into florets)
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ cup breadcrumbs (optional for topping)
- 2 tablespoons grated Parmesan cheese
INSTRUCTIONS:
- Preheat your oven to 180°C (350°F).
- Boil or steam cauliflower florets for 5–7 minutes until slightly tender. Drain well.
- In a pan, melt butter over medium heat. Add flour and cook for 1 minute.
- Slowly add milk while stirring to make a smooth sauce.
- Add salt, pepper, garlic powder, and half of the cheddar cheese. Mix until melted.
- Place cauliflower in a baking dish and pour cheese sauce over it.
- Sprinkle remaining cheddar cheese on top.
- Add breadcrumbs and Parmesan for a crispy topping (optional).
- Bake for 20–25 minutes until golden and bubbly.
- Let it cool slightly before serving.

- Don’t overcook the cauliflower; it should stay slightly firm.
- Add cooked chicken or pasta to make it a full meal.
- For extra flavor, mix in a pinch of paprika or mustard powder.
