These Birria Wings are juicy, spicy, and packed with rich Mexican flavor. Coated in a bold chili sauce and served with a savory consomé for dipping, they’re perfect for parties, family dinners, or whenever you crave something crispy and delicious with a twist.
INGREDIENTS
For the Wings:
- 1 kg chicken wings
- 1/4 cup sweet chili sauce
- 2 tbsp hot sauce
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt & black pepper (to taste)
- 2 tbsp oil
For the Birria Sauce / Consomé:
- 3 dried guajillo chilies (soaked & softened)
- 2 dried ancho chilies (optional)
- 3 garlic cloves
- 1 small onion
- 1 tomato
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp chili flakes
- 2 cups chicken broth
- Salt (to taste)
INSTRUCTIONS
Step 1: Prepare the Wings
- Clean and pat dry the chicken wings.
- In a bowl, mix sweet chili sauce, hot sauce, soy sauce, garlic powder, onion powder, paprika, salt, and pepper.
- Coat wings well and let marinate for at least 30 minutes.
Step 2: Cook the Wings
- Heat oil in a pan or preheat oven to 200°C (400°F).
- Fry or bake wings until golden and crispy (about 25–30 minutes).
Step 3: Make the Birria Sauce
- Blend soaked chilies, garlic, onion, tomato, cumin, oregano, chili flakes, and broth until smooth.
- Pour into a pot and simmer for 10–15 minutes until thick and flavorful.
- Adjust salt to taste.
Step 4: Combine
- Toss cooked wings in the birria sauce until fully coated.
- Serve hot with extra consomé on the side for dipping.
TIPS
- For extra crispiness, air-fry the wings instead of baking.
- Strain the consomé for a smoother dipping sauce.
- Add a squeeze of lemon before serving for extra flavor.
- Garnish with chopped cilantro and onions for authentic taste.
- Make it spicier by adding more chili or hot sauce.
