Instructions

1. Prepare the Cheese Dough

  1. Preheat your oven to 425°F (218°C).
  2. In a microwave-safe bowl, add mozzarella and cream cheese. Heat in 30-second intervals, stirring each time until fully melted (about 1-1½ minutes).
  3. Transfer the melted cheese to a food processor with the dough blade attachment.
  4. Add almond flour, coconut flour, and egg. Pulse on high speed until a uniform dough forms. (The dough will be sticky, which is normal.)

2. Shape & Roll the Dough

  1. Let the dough cool slightly to make it easier to work with.
  2. Roll the dough between two sheets of parchment paper until it is about ¼ inch thick.
  3. Peel off the top layer of parchment paper and transfer the dough (with the bottom parchment) onto a baking sheet.

3. Add Cheese & Bake

  1. Sprinkle ¼ cup of mozzarella cheese over the dough, leaving a ½-inch perimeter around the edges.
  2. Bake for 5-6 minutes, or until the edges are golden and slightly puffed.
  3. Remove from the oven and sprinkle with the remaining mozzarella and parmesan cheese.
  4. Bake for another 3-5 minutes, until the cheese is fully melted.
  5. Garnish with chopped parsley and serve warm.
