Instructions
- In a large saucepan, combine cranberries, strawberries, orange juice, orange zest, water, and both sugars.
- Cook over medium heat, stirring occasionally, until the mixture begins to bubble and the berries soften (about 8–10 minutes).
- Use a potato masher or spoon to gently crush the berries as they cook.
- Add cinnamon, nutmeg, cloves, salt, and vanilla extract. Stir well to incorporate the spices.
- Continue simmering for another 10–15 minutes, stirring often, until the jam thickens. It will continue to thicken as it cools.
- To test thickness, place a small spoonful on a cold plate—if it doesn’t run, it’s ready.
- Once the jam reaches your preferred consistency, remove it from heat.
- Let it cool for 10 minutes, then transfer to clean, sterilized jars.
- Store in the refrigerator for up to 3 weeks, or freeze for up to 3 months.
